Yellowfin Tuna
Our superfrozen Yellowfin tuna (Thunnus
albacares)
is even fresher than so called
fresh
tuna. Fresh tuna is often
10
days old before it reaches the final
consumer, whereas our superfrozen tuna
is frozen at -60°C on board of the
high
tech
sashimi
vessels within only
2 hours after the catch.
The ultralow cold chain is maintained all the way during transportation
from origin till storage
in our own
-60°C
/ -76°F
cold store.
The result is that after thawing the superfrozen tuna tastes as fresh as
can possibly be.
Also the absence of any smell is proof of the freshness of the fish.
This makes the product ideal for raw consumption, as sashimi or sushi
topping for Japanese
cuisine, or as carpaccio for
Italian
cuisine.
Although the colour of the tuna in frozen condition is
pinkish,
after defrosting in the right manner it becomes bright red. Be aware
that this is the natural colour and guaranteed not the result of any
chemical or other treatment.
We have
saku blocks available, as
well as loins.
If you are looking for your own -60°C chest freezer to store our
